Lans aux Meadows is a location on the northernmost tip of Newfoundland, where the remains of a Scandinavian settlement from the 1000′s was discovered in 1960 by Norwegian explorer Helge Ingstad and his wife, archaeologist Anne Stine Ingstad. The Blue Mussel in the Baltic Sea belongs to a particular species, Mytilus Trossulus, also located in Canada.
Aifur´s clams today taste as they did in the Viking village of Lans aux Meadows.

Trögden, or Trögds District, the peninsula southeast of Enköping pointing down over the northern Björkfjärden to Birka. On Trögden there has been, and still are, plenty of large manors and these guys only eat the best sausage and cold cuts. How about Reindeer sausage, elk sausage, Flat-smoked pork, Reindeer heart, Lamb steak and Cheddar cheese.
Lucky days we even throw in some bear sausage.

A tribute to the brave Viking fishermen who lived and fished the waters of Greby and Gissleröd outside todays Grebbestad. Rich findings indicate that man has visted these beaches for over 5000 years! Greby graveyard is said to be one of the most beautiful in the world with it´s 40 raised Bauta stones. According to local legend, they were raised to celebrate Scottish warriors.

Helgasalad

Our fresh and healthy Helgasalad consist of goat cheese, baby spinache, mangold sprouts, marinated beets and a apple vinegrette. 

Helga Holm is a replica of a longboat found in Stockholm 1979. The original boat was built in 1318. This year we celebrate the 30 year anniversery of the replica that our owner sailed his first open water adventure in.

Varangian’s roasted dwarf chicken

The chicken was introduced to our latitudes of the old Vikings. Varangians, a Russian term for the Viking Norsemen who moved to Russia.

Tore Hjort´s Venison

Ever since Theoderik the Great during the 6th century threw himself out of his warm bath and set off after a magnificent deer, only to dissappear forever, has this majestic animal been a symbol and is said to ”show the way to the land after death” . This wonderful beast has been represented on well known viking stones such as Kråkhättan and Möjbrostenen. Our venison  is inspired by Tore Hjort who was a norwegian chieftain from Vågen in Hålogaland. He fought in a terrible hailstorm on Jarl Håkons side at the battle of Hjörungavåg in the year 986, only to die by another Kings hand, Olav Tryggvasons, in the year 999.

Indulgence of the Raven Lord

During the later part of the viking age Odin was thought to be the greatest of all, and has gone by many a name since then; Greybeard, Hangadrott, Ygg, the One-eyed and the Raven Lord are some of the names that he has listened to. They also believed him to be the father of both men and gods – leading to one of his most widespread nicknames: The Allfather.

Odin is a tall, fair man and, of course, a big man with the ladies. Although his somewhat incalculable ”friend” Loke teases Odin for being a bit unmanly because of the Allfatheronce taking on the shape of a woman.

Lamb racks Dereson

Garlic and honey marinated lamb rack with honey tossed vegetables served with lambsausage and sauce from the herb gardens of Constantinople.

A fairly famous musician and his band leader once plundered Restaurant Donners Brunn on Gotland for the recipe of this delicious dish. They brought the recipe over the Baltic Sea to the mainland during howling autumn storms.
The lambs have grazed in our northern pastures since time immemorial and the sauce is carefully cooked with exotic spices from Constantinople bazaars.

King Bjorn´s Birka style Pike-Perch

A taste from Viking times! The most typical fish on a Birka vikings dinner table was the wonderful Pike-Perch. This large delicious fish has been prepered in many forms throughout the years. With our Pike-Perch comes the fragrance of capers and fennel from Miklagårds swirling and never ending spice market. This dish gets it´s name from king Bjorn who ruled over Birka during the first half of the 7th century with an iron hand from his recidence on Adelsö.

The popular festival offers music, food, entertainment of all kinds and a fantastic Viking market. Viking ship Aifur with crew is frequent guest on these days. A must for anyone interested in the Vikings.

In the wondrous viking novels by Frans G. Bengtsson, called Röde Orm (red snake), which revolves around the adventures of a young viking by the name of Orm who gets dragged halfway across the world with his friend Toke.
When the two of them finally make their way back to scandinavia they get invited to drink Yule with king Harald Bluetooth. As they sit down to eat, Toke and Orm are overheard having the following exchanging of words:

-That smell is the best there is, Orm said breathlessly

-It has got thyme in it, Toke said, his voice failing him

Rurik´s Feast

According to the Russian Nestorchronical, the norskman Rurik grounded the Kiev Kingdom and therefore became the founding father of the dynasty that ruled until 1598. He and his brother landed near Ladoga sometime during the first half of the 7th century and soon recieved a mandate from the slavic people to rule their area where the first russian kingdom emerged. Before that, the slavic people were terrorized by the norskmen and one can understand why they decided to appoint a tough russian tribe leader like Rurik to govern. Content, the brothers often sat in Kiev´s ruling quarter reminising over the russian frying pan´s aroma of moose and lamb.

In the Islandic book, the oldest Icelandic historian, Are Frode, describes how father and son, Erik Röde and Leif Eriksson, discover different land in the West – Vinland on different trips and adventures.

In this new fertile continent, fruits and berries grow that no one has ever seen. In addition to the grapes that contributed to the name of the new country, the larger grapefruit packs well on board. Grapefruit has got its name because the same like grapes grows also  in large clusters. Both sour and tasty, and it turns out that they also cure the hardest snout with their useful meat. With the ships on the flat cliffs of Greenland, Hellamand, the cow milk was boiling a bit to long time in its kettle and there was a fresh new taste in the bottom of the creek – Caramel!

Enjoy the Vinlandspie with its long-range Grapefruit sorbet and gorgeous caramel. It is the host.

King Rollo’s Parfait

During the 10th century the viking started to build good relations with the local chieftains of Northern France. King Charles III (the Simple) didn’t like the new alliances and called on the year of 911 the viking chieftain Rollo to a meeting in the town of Saint-Clair. The king offered Rollo to be duke of the west coastal area in the north – in exchange Rollo would be the king’s vassal, get baptised and defend France against the vikings. Rollo took the deal – and then established the dukedom of Normandie.

Elderberry mousse with rhubarb and strawberry compote and chocolate flarn

Before christian times it was tought that elderberries gave luck and that good ghosts would stay around the homestead if it had an elderflower tree. Hyllemor is an old wise female spirit who scares small children so that they don´t break any branches or create a mess under the elderflower tree. This was considered to be a grave sin and belived to lead to accidents and sickness.

Cake Ansgar

Nut and applecake with honey cream

Ansgar is also called the apostle of Scandinavia and was a German monk, missionary, archbishop and saint. He came to Birka first time, after a very dramatic trip with robbery and assault, by foot in 829 to proclaime White Krists word until the year 831. Then he went back to Hamburg and Bremen, but after 20 years the heathen dissolved Ansgar’s little church, and he went back to Birka. One can assume that Ansgar had very little of the honey wine but more of the hazel and honey cake.

It is unlikely that the Vikings had chocolate like we do today. However, the cocoa bean is considerably older than the swedish Iron Age. The old Olmekerna harvested the first beans along the Amazon already 3000 years ago.
We at Aifur think that Leifr Eiríksson is called ”The Successful” for the reason that during the meeting with North America’s indigenous people he had the chance to taste these amazing beans.

Sigrid Storråda´s little Pie

As mistress over Gautland (Västergötland) Sigrid was very much sought after by lesser Kings and two of her suiters were so precistent that she burned them alive! After that she became known as ”Storråda”. Another king to whom she had nothing against marrying was Norway´s king Olav Tryggvason, but when they were to become engaged, Sigrid refused to accept christianity and recieved a ” dagsedel” (slap) for her troubels. A huge mistake on the part of the king because Sigrid then married the Danish king Sven Tveskägg and convinced him to go to war with Olav. And so it was, the Norwegian king was never to slap another woman as he died in the battle at Svolder year 1000. Perhaps not because of this deed, but because of her initiative can we today delight in an fruit filled pie in her name.
